As we transition from short, cool days to long, warm, summer nights, my heart starts to beat a little faster, my mind calms as I taste the ocean, and I start shopping for in-season, fresh, sweet fruit to make the most colorful, delicious, and nourishing smoothie bowls.

See, for me, summer is synonymous with sizzling sunshine and cold, creamy, refreshing bowls filled with passion fruit, blueberries, coconut flakes, granola, and a drizzle of honey, or whatever I’m feeling that day!

Best part? I don’t have to put on the oven in the nurturing, yet sweltering heat!

Smoothie bowls are easy, delicious, packed with whopping nutritional value and let’s not forget, so, so pretty!

Yes, I am guilty of photographing them as if they were major Insta-worthy.

Since I make smoothie bowls pretty often throughout the summer, I’m always switching up and experimenting with my recipes.

Lately, I’ve been obsessed with making these ‘pretty in pink’ pitaya smoothie bowls.

The tropical flavors that make up this blend will transport you from your kitchen to Tahiti in a hot second! Who knew travel could be so easy?!

Pitaya (Dragon Fruit) is the main ingredient and base of this smoothie bowl.  You’ll be surprised to know that it’s natural, bright pink color isn’t even the best thing about this superfruit.

For a little bit of natural sweetness and major island vibes I added frozen mango and pineapple to this pitaya smoothie bowl. Then, I added flaked coconut for a healthy fat that helps to keep blood sugar stable when consuming sugar.

Coconut water acts as the liquid here and will help to keep you majorly hydrated with its bounty of electrolytes!

I topped my smoothie bowl with some of my favorite exotic fruits that just screamed SUMMER to me!

The tart flavors of spiked melon, golden berries, pomegranate, and passion fruit balances out the sweetness of the pitaya base, while the coconut satisfies your palate with a sweet crunch.

You eat with your eyes first, so pretty, colorful, edible flowers are always a must too, right?!

Ingredients

Base

  • 5 ice cubes (optional)
  • 1 c coconut water
  • 1/4 c flaked coconut
  • 1/4 c frozen pineapple
  • 1/4 c frozen mango
  • 2 packs, frozen unsweetened pitaya puree

Toppings

  • 1/4 c pomegranate seeds
  • 1/4 golden berries, sliced
  • 1 spiked melon or cantaloupe, diced
  • 1/4 c mango, cubed or cut into stars
  • 1 passion fruit cut in half

Instructions

  1. Add all base ingredients into a blender and blend until smooth and thick.
  2. Transfer smoothie into two eclectic bowls.
  3. Add toppings and enjoy, tasting the tropical flavors in every bite.

    That looks delicious and the burst of color is just fantastic. Sadly, I don’t think some of the ingredients (Pitaya and Golden Berry) are available in my country.
